Banana Cinnamon Pancakes

I couldn’t wait to hop out of bed and make these! After just coming off a night shift and sleeping in until noon, it really was the perfect time to roll up my sleeves and make some pancakes. I used to always make these a few years back, as the recipe is really as simple as it gets. However, after spending way too much time hooked up to MyFitnessPal, and learning all of the macronutrients in most of the foods I eat, I thought it was best to “stay away” from this “high carb” fruit. Why? I don’t know. I really don’t. Bananas are probably my favorite fruit. They no doubt provide the best base for a smoothie, is the #1 fruit in my opinion to go along nut butter, and is great for baking! Also, bananas are high in potassium, provides energy if eaten before a strenuous workout, and also contains high levels of tryptophan (the precursor to serotonin) which helps improve mood. This is pretty much a universal recipe in the paleo world, but I added my little spinnamin on it… see what I did there?

 

Banana Cinnamon Pancakes

The Players

  • 2 eggs
  • 1 medium banana
  • 1 T coconut flour
  • 2 tsp cinnamon
  • 1/4 tsp baking powder
  • 1 T coconut oil

The Rules

Mix together the eggs, banana, coconut flour, cinnamon, and baking powder in a small bowl. It make take awhile to get the chunks out of the banana! In a pan on medium heat, slowly heat up the coconut oil, until it coats the pan. Begin grilling your pancakes. I was able to get two batches of 3 mini pancakes. Once my pancakes were finished and cooling, I used to leftover coconut oil in the pan to saute up walnuts, coconut ribbons, and more bananas. Once finished, I added the mixture to the pancakes, added cinnamon and pink sea salt, and drizzled with honey.
