Cauliflower Mash, Mumford, and Dr Dre

Where has the summer gone! It is seriously flying by, and A) it’s going down to 24 degrees in Kelowna next week, which is low… and B) it’s mid August, and school is a mere few weeks away. I spent the last few weeks continuing my tourist alter ego here in Kelowna, as well as visiting my hometown; Edmonton, AB, for a week! It was so awesome visiting all my friends and family, as well as celebrating my boyfriends birthday (by seeing the Lion King on Broadway), attending a wedding, and the most memorable moment of the trip (sorry mom)… seeing Mumford and Sons live with my best friend!

Probably one of my favourite bands right now, and they happened to be playing in Edmonton the week I was visiting so I had to get tickets! Lucky for us we scouted some empty seats and ended up 3rd row during the Mumford set. It was heavenly and I will never forget Marcus Mumford singing sweet nothings to me all evening and the sexy guitarist darting eyes at me. Okay that didn’t really happen, but let’s just go with it. Here are some photos I shot during the concert!

Okay there is one bad thing about my vacation back home. Okay two. Wine, and food. Don’t get me wrong, I fully enjoyed every drop of wine in my glass, crab cake bites on mini spoons (like on the show The Taste!), and the nutella cheesecake dessert I ordered fully knowing there would be gluten AND dairy involved… but on day 6 of vacation, it had definitely all caught up to me. *note: please refrain from reading if you dislike hearing about digestive distress* But seriously, bloating, heartburn, indigestion, basically every symptom that you could use Pepto Bismal to alleviate… I got to not so joyfully experience. Even 4 days later. Since I’ve been home, I’ve been back to normal. Intuitively eating, going to yoga, matcha tea… the whole shabam. And I still feel awful. My nose is running, I feel like a balloon, and my energy levels are still somewhere at the Mumford and Sons concert at Rexall Place. Systemic imflammation comes to mind, and I hope I can get back to my normal pretty darn quick. I’m definitely going to use this experience as a lesson not to go overboard at the buffets and tequila bar in Mexico in October!

Last night, my boyfriend and I cooked one of my new favourite dinners! We have lots of favourites by the way. Roasted red pepper, stuffed with sausage, peppers, onions, mushrooms, with bbq cajun chicken, and my boyfriends famous cauliflower mash! He boils the cauliflower in a small amount of water and chicken bouillon, then added in homemade garlic butter, small amount of parmesan, fresh garlic, and blends! Honestly so so good. I never liked cauliflower mash before but this stuff is deadly. Afterwards we were going to be nerds and watch old movies on Netflix but opted to see the new “Straight Outta Compton” movie, which I highly recommended. It was so well done, and I couldn’t believe how much the actors portrayed the characters so well. As I said early, Mumford is currently my favourite band, but that doesn’t change the fact that I only listen to gangster rap when I work out 🙂

Can’t wait to eat the leftovers! Today I’m going to Moksha yoga with live music! Looking forward to it. Then spending the day food prepping my lunches as I have a very busy week ahead. Enjoy some more photos from my weekend, happy Sunday!
