Curried Cauliflower

This by far is one of my favourite recipes, and will definitely be thrown into my weekly food prep rotation. I used to always think cauliflower was lacking nutrition, due to it;s boring white color! But in reality, these little florets are a perfect vehicle for your perfect spice and is a powerhouse of vitamins including Vitamin C, Vitamin K, a whole bunch of B vitamins, and the minerals magnesium, manganese, and phosphorous! Since I don’t eat pasta, and rarely eat rice or quinoa, I love a good solid base veggie. Zucchini noodles, broccoli slaw, sauteed cabbage are a few of my other favs, but cauliflower is definitely going to be an added staple.

 

It’s a very simple process. So simple that you really don’t have any excuse. Pretty sure it’s easier than cooking rice, cause no one knows how to do that…

So cut up your cauliflower. I sliced mine up into bite size pieces OR you can brave Costco any day of the week and buy the pre-cut stuff. Whatever floats your boat. I’m weird and always have like 5 podcasts on the go so cutting up vegetables is actually a very enjoyable activity for me 🙂

Melt some coconut oil in a pan, 1-2 Tablespoons. Throw in your cauliflower, along with spices of choice! I chose garlic powder, curry, turmeric, salt, and pepper. Then jsut watch it crisp up into delicious little cauliflower nuggets. It’s actually amazing. Like to think I used to eat popcorn chicken from KFC on a daily basis (I was blessed with a pocket full of change every day and was one of the “lucky” kids that got to eat food court lunch…) and now I get excited over sauteed vegetables?

In another pan I sauteed up sliced zucchini, pre-cooked chicken, and cherry tomatoes. Oh and sun dried tomatoes, those are a must have. Think Costco.


So there you have it, nothing too special about this dish but it was satisfying and packed with flavor AND nutrition. The good dose of fat keeps me satiated, my hormones regulated, and my blood sugar levels balanced. Adding in different vegetables for more variety and to keep things interesting.
