Pesto Chicken Spaghetti Squash

I moved! I am officially settled in to a new suite up on Black Mountain with my new roommate Hallie. I’m sure you will see many posts about our adventures in the future. For our first dinner I whipped up this delicious pesto chicken spaghetti squash. It was Hallie’s first time having spgahetti squash! Trust me I am as shocked as you… she also has the most adorable little pomeranian named Marcel, which will also be featured in many of my instagram posts 🙂


The first week in our new place has already been a good indicator of how this new living situation will go. Lots of candles, delicious healthy food, tea, and of course some wine. Hallie made the best chicken curry (I’ll grab the recipe), and I made a (slightly dry) roast last night. I definitely have to remember the slow and low rule, because putting in in the crock pot on high because you’re running late is not the answer folks. Also, we live about 5 minutes walking distance from a mountain with beautiful trails (too snowy and cold to check them out but we plan on exploring soon!) and apparently there are tons of stares! I can play Justin Bieber whenever I want, and eat peanut butter out of the jar without judgement. It’s pretty awesome. We’ve already both dove into a new fitness regimen, and even though neither of us plan on competing anytime soon (we’ve both done bikini competitions), we do plan on prepping for a photo shoot or something to keep us motivated! We’re almost settled in, and soon we will start decorating our “sanctuary.” Which basically means a trip to Sage for essential oils, fuzzy blankets, and motivational quotes on the walls #sorrynotsorry.

Pesto Chicken Spaghetti Squash

Serves: 2 large servings
 
This is used with a premade pesto squash because A) I no longer haev a vitamix and B) convenience guys, convenience.
Ingredients
  • 1 cooked spaghetti squash
  • 2 boneless chicken breasts
  • 4 white mushrooms, chopped
  • 1 medium zucchini, diced
  • ½ sweet onion, diced
  • ½ cup cherry tomatoes, halved
  • handful fresh spinach
  • 1 T olive oil or cooking fat of choice
  • 2 tsp garlic powder
  • 2-4 T pesto sauce (I used Costco's Basil Pesto sauce) + more sauce if desired
Instructions
  1. Pre-heat over to 450 degrees. cut squash in half, scoop out seeds, and bake face down (drizzle oil on top) for 30 min
  2. Cook chicken as desired. Bake for 22 min at 350 degrees, or saute in pan
  3. In a medium sauce pan heat up oil
  4. Add sliced mushrooms, zucchini, and onions and saute until soft
  5. Add garlic powder, salt, pepper
  6. Toss in fresh spinach and cherry tomatoes
  7. Finally, add diced chicken and pesto sauce
  8. Top mixture over cooked spaghetti squash
  9. Enjoy 🙂
