For the longest time I remember I always worked Sunday’s. School during the week, restaurant on the weekend. I worked 72 hours at the hospital this week, and I’m am beyond exhausted. Normally I would not work that many shifts (6 12 hr shifts in 7 days!) but because I’m going to school soon I am getting in all the hours I can.
So far this morning is pure relaxation. I’m still watching Marcel, the little Pom Pom, and conjuring up what wonderful breakfast I’m going to make! Spinach omelette with breakfast sausage, and fried tomatoes? Paleo banana pancakes with chocolate chips and Canadian maple syrup? Hmmm…?
Also, I did a little baking yesterday and I’m proud to say the nurses gobbled everything up! I actually found this recipe from a fellow blog mates (is that a thing?) here on WordPress! I made these delicious triple chocolate peanut butter banana bread bars by Gluten Free Jess! They were absolutely delicious. I DID switch it up a smudge, I only used 1/2 cup of PB2 and 1/2 cup of natural peanut butter (instead of a full cup of pb2) and they turned out great! Very decadent if I do say so myself. I topped with a concoction of Greek yogurt, pb2, and natural peanut butter for an icing. Pic taken before the icing! And a piece was missing after I took the pic so I kinda zoomed in… Things happen okay?
Happy Sunday! Off to gym, meal prep, dog walk, and then park on the couch and watch the MMVA’s, snuggle with this cute puppy (and maybe my bf if he can stand watching Miley host) and enjoy a nice glass of Okanagan vino 💕
